What You will Learn on This Course

  • The course will last around half a day
  • Learn how to butcher whole hogget (in between lamb and mutton), working with our Master Butcher
  • Develop your butchery skills with hands-on learning
  • Tie and marinade or dry rub prime cuts, such as canon, loin, rack or chops for frying and roasting
  • Prepare your own hogget sausages from scratch
  • Learn and use different curing techniques from our Head Charcutier
  • Make your own hogget charcuterie, perhaps hogget bresaola or hogget salami
  • We’ll keep your charcuterie in our controlled conditions for perfect drying, and post it out to you when it’s ready to eat
  • While you’ll take away your perfectly butchered hogget and professional-looking sausages on the day, ready to cook and enjoy at home.

The journey began a few years ago in a garden, where they quickly outgrew the initial workshop and the surrounding modular buildings and sheds that had been added.

The team then expanded by opening its first factory, growing from one person to a larger group of dedicated artisans. Now, with the capacity to produce one of the largest charcuterie outputs in the UK, they remain steadfast in their commitment to handcrafting products in small batches.

Bray Cured prides itself on the meticulous, hands-on approach to each product. Their process is deliberate and emphasizes a strong connection with the food. The team nurtures every batch of artisan charcuterie, from meat selection and grinding to stuffing, curing, and drying, aiming for excellence in each step.
